Embracing tradition, the winemaking process begins with a delicate blend of 70% destemmed grapes and 30% whole bunches, a meticulous balance to ensure complexity. Fermentation takes place in limestone tanks sourced from a nearby quarry, where the essence of the land infuses into the wine. Following pressing, the wine finds its home in French oak vats, where both alcoholic and malolactic fermentations unfold, weaving layers of flavor and texture. Aged gracefully in French oak barrels for 8 months, this wine undergoes a gentle fining before being bottled unfiltered, preserving its true essence.
