From time to time, the blessing of virtually perfect climatic conditions can produce an exceptional vintage and at Clover Hill 2018 was another such a year. And ever since this first happened in 1999 whenever they are blessed with such premium fruit, the winemakers will draw on their unique experience to create a top of the range Clover Hill Blanc de Blancs (100% Chardonnay). The fruit was gently whole-bunch-pressed, fermented and underwent malolactic fermentation then held on their lees and were regularly battonaged then tiraged and aged on lees in bottle for almost five years. As a result, the 2018 Blanc de Blancs shows a golden straw appearance with a fine, persistent bead and delicate mousse. The wine displays aromas of brioche and honey with a hint of toasted hazelnuts, and the palate is creamy with a textural mid-palate and exhibits flavours of preserved citrus and lemon curd. Drinking beautifully now but will also reward greatly if left to develop over the next 10+ years. Serve with a selection of fine canapés or next to a fresh seafood platter.
