Description
This Blanc de Blancs sparkling wine is the centerpiece of Taltarni’s winemaking, made using the méthode traditionnelle in a cool-climate environment. Despite changes to the labeling over the years, it remains their highly acclaimed and top-selling bubbly. The wine undergoes initial fermentation at low temperatures in steel tanks, followed by malolactic fermentation in French oak and secondary fermentation in the bottle on lees for 24 months, showcasing exceptional and traditional craftsmanship. The resulting wine is pale straw in color with a hint of green, fine mousse, and persistent bead, with long-lasting flavors and balanced acidity. Its aromas of green apple and a touch of cinnamon complement a perfectly balanced palate of brioche and mineral flavors, underlined by dry, crisp apple-like acidity. Although it’s already delicious, the wine will continue to mature in the bottle for 4-6 years. As a perfect aperitif, it also pairs well with freshly shucked oysters or delicately prepared shellfish and prawns.
