Description
Taltarni has created a remarkable Sparkling Red wine using the méthode traditionnelle, resulting in a uniquely Australian wine style that has received 90pts from James Halliday. Despite not being French, this Sparkling Shiraz was aged for six months in French oak barriques before undergoing the traditional tirage method. The wine was left on lees for around ten months to enhance the creamy texture and flavour before disgorging and adding a bright liqueur, making it an outstanding Sparkling Shiraz even by Australian standards. The wine has floral aromas and flavours of ripe plum and raspberry, complemented by spiced chocolate and sweet oak notes. The sweetness perfectly balances the robust tannins from the cold Pyrenees climate, resulting in a velvety texture with the expected elegance and structure of the terroir. The wine can be enjoyed now but can also be cellared for up to five more years. It pairs well with whole roasted turkey, a full cheese platter, or as an aperitif with a twist.
