A classic expression of Barossa Cabernet Sauvignon shaped by heritage, thoughtful vineyard sourcing and a dedication to regional character – with the 2024 vintage delivering richness, structure and depth.  The Valley & Valley Cabernet Sauvignon brings together fruit from vineyards across both the Barossa Valley and the cooler Eden Valley, blending plush valley fruit with the freshness and structure of hillside sites. The aim is a style that reflects the classic Barossa expression — generous fruit, subtle oak influence and smooth, refined tannins.  Carefully harvested, crushed and destemmed before fermentation, the fruit is gently extracted over seven days with regular pump-overs to maximise colour, flavour and varietal character. The wine is then matured in French oak for up to twelve months, allowing the oak to integrate gradually while supporting structure and complexity.  Shows a deep crimson hue with inviting aromatics of dark fruits, cassis and ripe blackberry unfolding alongside notes of licorice, warm spice and delicate cedary oak. The bouquet is rich and expressive, reflecting both vineyard character and careful élevage.  The palate is full and structured, revealing layers of dark berry fruit supported by subtle spice and finely integrated oak. Fine tannins provide shape and length, carrying the flavours with balance and power while finishing smooth and generous. The result is a Cabernet Sauvignon of classic Barossa depth and approachable elegance.  A superb partner for roasted meats, slow-cooked lamb, grilled steaks or hearty pasta dishes. Drinking beautifully now while possessing the structure to evolve over the medium term, where further savoury complexity and refinement will emerge with time.
