Nestled high in the mountains of Caravaca de la Cruz, in Spain’s Bullas DO, Bodegas Saura is a winery that connects deeply with both nature and history. Its vineyards sit between 600 and 900 metres above sea level, on limestone terraces that overlook the Sierra de las Cabras mountain range — a landscape rich in ancient caves, including the nearby Cueva Negra archaeological site.

Here, winemaking feels timeless. Fermentation and aging take place in tanks carved directly from local limestone, allowing the wines to breathe the same mineral air that shapes the soil. Working organically, the team cultivates Monastrell and Garnacha Fina bush vines by hand, harvesting each bunch with precision and respect for the land.

The result is a collection of elegant, structured wines that capture the essence of Mediterranean altitude — aromatic with wild herbs and spice, layered with red and black fruit, and grounded by the freshness of their mountain origins. Signature wines such as Cogevientos and Vinedos de Utopia embody the winery’s philosophy: wines that tell stories of place, patience, and purity.
