Cool-climate m?thode-traditionnelle sparklings is the core of Taltarni winemaking and this brilliant 2016 vintage Sparkling Brut exemplifies that perfectly. 2016 was a warmer year with a cool spring and early summer nights which defined this vintage as one that displayed elegant fruit flavour and balanced acid. The wine is light straw in colour and displays a delicate bead, enhanced by an extended time on tirage lees, which has also resulted in a persistent and creamy mousse. Complex aromas of honey and bright citrus are complemented with elegant aromas of brioche and roasted nuts. A bright natural acidity that lingers on the finish extends the length of the palate, whilst a soft creamy texture fills the mid palate. Partial malolactic fermentation creates volume and texture, whilst a lower dosage complements the natural acid that lingers on the palate. Has already been allowed to age in bottle meaning it will drink beautifully on release but will also cellar well for another 5-7 years. Serve with oysters, sushi or other fresh seafood, or enjoy by itself as an aperitif.
This flagship cool-climate m?thode-traditionnelle sparkling Blanc de Blancs (100% Chardonnay) is at the very heart of Taltarni winemaking. And even if the labelling has changed over the years, this is still our highly awarded and best-selling Taltarni bubbles. With initial fermentation on low temperature in steel tanks, malolactic fermentation in French oak and secondary fermentation in the bottle on lees for 24 months, the craftsmanship behind these wines is both traditional and exceptional. And the result properly reflects this from the pale straw colour with a soft green hue, though the fine mousse and persistent bead, to the long and persistent flavours with balanced acidity. Aromas of green apple and a hint of cinnamon are complimented by a perfectly balanced palate of brioche and mineral flavours, underpinned with dry, crisp apple like acid. Already a great drink, it will continue to develop in the bottle for another 4-6 years. The perfect aperitif, it can also be served next to freshly shucked oysters or delicately prepared shellfish/prawns.
