remains one of the winery’s most awarded and best-loved wines. Crafted exclusively from 100% Chardonnay and produced using the méthode traditionnelle, it reflects both the cool-climate pedigree of the Pyrenees and Taltarni’s long-standing commitment to precision and craftsmanship. Primary fermentation takes place at low temperatures in stainless steel, followed by malolactic fermentation in French oak. The wine then undergoes secondary fermentation in bottle, spending 24 months on lees to build depth, texture and complexity. In the glass, it shows a pale straw colour with a soft green hue, fine mousse and a persistent, elegant bead. The nose opens with fresh green apple and a subtle hint of cinnamon. On the palate, classic brioche notes are balanced by mineral undertones and a line of crisp, apple-like acidity that carries through to a long, refined finish. The balance between freshness and complexity is beautifully judged, making the wine both immediately appealing and quietly serious. Drinking beautifully now, yet with the structure to continue evolving gracefully for another few years. An ideal aperitif, and a natural match for freshly shucked oysters or delicately prepared shellfish and prawns. A benchmark Australian Blanc de Blancs — elegant, composed and pure Taltarni.
