A beautifully crafted dessert wine from the accomplished team at Taltarni, this Cordon Cut Sauvignon Blanc offers an uncommon and elegant interpretation of the variety. The cordon cutting technique — where the fruit-bearing cordon is severed to halt water flow — encourages the vine to draw moisture from the berries themselves, concentrating flavour and natural sugars while preserving freshness. Once harvested, the berries are gently pressed and slowly fermented to retain their rich character. Fermentation is intentionally halted to leave a touch of residual sugar, perfectly balancing the vibrant, zesty nature of Sauvignon Blanc. The result is a wine that delivers the indulgence of a dessert style without the heaviness or syrupy texture often associated with sweet wines. On the nose, lifted aromatics of dehydrated tropical fruits set the tone. The palate follows with flavours of boysenberry and ripe peach, finishing with a bright line of lime that keeps the wine fresh, poised and endlessly drinkable. Given ample time to mature before release, it drinks beautifully now, yet has the balance and concentration to cellar confidently for another few years. A perfect partner to sweet desserts, fruit-based dishes or a well-curated cheese platter. A refined, modern dessert wine — rich yet refreshing, indulgent without excess.

Taltarni’s story begins with place — in the rugged, breathtaking Pyrenees of Victoria, where the land has been sculpted over millennia and treasured for more than a century of winegrowing. Established in 1969 by John Goelet — a descendant of the famed Guestier wine merchant family of Bordeaux — Taltarni was born from a global search for a site worthy of the world’s great vineyards.
With a pioneering spirit, the earliest plantings focused on classic Bordeaux varieties like Cabernet Sauvignon, Cabernet Franc and Merlot. The vineyard later expanded to include Sauvignon Blanc, Chardonnay, Shiraz, Pinot Noir and Pinot Meunier — building the foundations for a diverse and dynamic portfolio of sparkling, red and white wines that continue to reflect the strength of this remarkable region.
Here, stewardship matters. As custodians of this land for the last 50 years, the Taltarni team continues a multi-generational commitment to nurture the soil, preserve the landscape, and create wines that speak clearly of their origin — vibrant, elegant and enduring.
