Shiraz, Mataro and Grenache were harvested separately at optimal ripeness, destemmed in the vineyard and fermented as whole berries using natural yeasts. Foot-stomped twice daily in old concrete fermenters to keep extraction gentle, the wines were basket pressed and matured in old French oak for four months. Each variety was kept separate until expertly blended just prior to bottling. The result is a beautifully balanced blend where Shiraz brings blue-fruited depth, Mataro adds earthy structure and savoury grip, and Grenache delivers juicy, vibrant red fruit.
